Sfiha



Sfiha




500 gm flour
80ml corn oil
1tbs active dry yeast
1 tbs sugar
1 tsp salt
2tbs powder milk
280 – 300ml warm water one may needs more or less water it depends on the flour and the weather

Stuffing
200 gm minced meat (lamb meat or mixed lamb and veal)
2 tbs olive oil
3- 4 fresh tomato cut into small pieces 
1onion cut into small pieces
3 tbs pomegranate molasses ( if not available use lemon juice)
2 tbs ketchup
Salt, black pepper
1tbs butter
Hot sauce if desired  
1/4 cup pines

Mix well meat with all stuffing ingredients and put in a sieve so as water of onion and tomato drained  

In a food processor mix flour, corn oil, yeast, sugar salt and the water or you can mix it by hand. Knead dough for 5 -7 minutes , brush the dough with  a generous amount of  corn oil and cover until rise -one hour .
 Divide dough into walnut size balls. Roll between hand palms to smooth

Roll out balls with a rolling pin to form 8 cm diameter circles. Put one tbs of meat mixture on dough circle, scatter pines over each piece

Bring the edges up and press to make a square

Arrange meat pastries in a tray brushed with corn oil, tray should be  as well brushed with corn oil .
Bake in a moderate oven (180° C) for 25 minutes or till dough is golden and meat is cooked ( keep checking the  underside of pastry when it becomes pinkish , then it will be time for the top part to be cooked )
