Peanut Biscuits
275 g (10 oz) plain flour
1/2 tsp baking
powder
1/2 tsp salt
1/2 tsp
bicarbonate of soda
100 g (4 oz)
butter
225 g (8 oz)
light brown sugar
100 g (4 oz)
crunchy peanut butter
2 eggs, beaten
Sift the flour, baking powder, salt and bicarbonate of
soda into a bowl. Add butter, cut into pieces, and rub into the flour until the
mixture resembled fine bread crumbs.
Stir in the sugar. Add the peanut butter and the
beaten eggs and mix to a soft dough.
Form the dough into small balls, around 3 cm (1 inch)
across and place a little apart on greased baking sheets. Mark each biscuits by
pressing the surface with a fork to make a criss –cross pattern.
Bake in a preheated oven for 12 – 15 minutes until
risen. Remove and leave 1 minute, then transfer to a wire tray to cool. Store
in an airtight tin
