Banana Cupcakes W Cream Cheese Frosting

Ingredients
·
3 cups flour
·
1 1/2 teaspoons baking powder
·
1 1/2 teaspoons salt
·
2 1/2 cups sugar
·
3 eggs
·
1 1/8 cups canola oil
·
1 1/2 teaspoons vanilla extract
·
4 ripe bananas, mashed
·
1 1/2 cups milk
·
Cream Cheese Frosting
·
2 (8 ounce) packages cream cheese, softened
·
1/2 cup butter, softened
·
2 cups sifted confectioners' sugar
·
1 teaspoon vanilla extract
How to make it

Preheat
oven to 350 degrees. Line a standard sized muffin pan with muffin liners or
spray with cooking spray. In a large mixing bowl, combine all the ingredients.
Mix until just blended.Fill muffin cups a little more than 3/4 full. Bake for
about 20 - 24 minutes or until a toothpick comes out clean. Remove from oven
and cool completely.

While the cupcakes are cooling, make the
frosting. In a medium bowl, cream together the cream cheese and butter until
creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar.

Once the cupcakes have completely cooled,
ice them and enjoy!
I added a cup of raisins and 2 tbs of oatmeal , didn't decorate all cupcakes.
