Aubergine with Curry

Aubergine with Curry



Paste ingredients

4 cloves garlic peeled
1/2 tsp black pepper
2 tsp coriander powder
1 tsp fresh ginger
1 tsp curry seeds 
1/2 tsp turmeric
1/2 tsp chili powder
4 fresh tomatos peeled


1/2 kilo aubergine
2 chopped onions
2 tbs tamarind
4-5 curry leaves
2 tbs vegetable oil
Salt and pepper
Coconut milk  400ml


Put the paste ingredients in a blender till smooth
In a cooking pan put 2 tbs oil and fry the onions till golden
Cut aubergine into big chunks and add to the onions with curry leaves, simmer, covered for about 10 minutes
Once aubergine changes color, add paste and simmer, covered for 20 minutes until aubergine is well cooked
Add the tamarind and the coconut milk
Add salt and pepper and simmer for 10 minutes uncovered. 
Serve with Basmati rice.
